1ļøā£ SautĆ© the Onion
Heat the oil in a large skillet or wok over medium heat. Add the chopped onion and cook for 2ā3 minutes until translucent and fragrant.
2ļøā£ Add Garlic, Ginger & Chicken
Stir in the minced garlic and grated ginger (if using). Cook for 30 seconds, then add the minced chicken. Use a spatula to break it up and stir-fry for 5ā6 minutes, until nicely browned and cooked through.
3ļøā£ Add the Vegetables
Add the carrots and bell pepper first, giving them a 2ā3 minute head start since they take longer to soften. Then add the zucchini and green beans or broccoli. Stir-fry for another 8ā10 minutes, until all vegetables are tender yet still crisp.
4ļøā£ Season to Taste
Pour in the soy sauce and season with pepper. Taste and adjust with more soy sauce or a pinch of salt if needed. Lower the heat and let everything simmer for 2ā3 more minutes so the flavors can combine.
