- Preheat oven: Set your oven to 350°F (175°C). Lightly grease a 9×9-inch baking dish with butter or nonstick spray.
- Mix dry ingredients: In a large mixing bowl, whisk together the flour, granulated sugar, baking powder, salt, cinnamon, and nutmeg.
- Add wet ingredients: Pour in the melted butter, buttermilk, and vanilla extract. Stir just until the batter is combined and smooth—do not overmix.
- Assemble cobbler: Pour the batter evenly into the prepared baking dish. Arrange the sliced bananas evenly over the top of the batter.
- Add topping: Sprinkle the brown sugar evenly over the bananas for a caramelized finish.
- Bake: Bake in the preheated oven for 40–45 minutes, or until the cobbler is golden brown and a toothpick inserted into the center comes out clean.
- Cool & serve: Let the cobbler rest for 10–15 minutes to set. Serve warm with whipped cream or vanilla ice cream, if desired.
