1️⃣ Sauté the Caramelized Onions
- In a skillet, melt butter and olive oil over medium heat.
- Add the thinly sliced onions, a pinch of salt, and sauté for 10–15 minutes until golden and soft.
- Stir in Worcestershire sauce and balsamic glaze, cooking for 2–3 more minutes until the onions are beautifully caramelized. Remove from heat and set aside.
2️⃣ Make the Burger Sauce
- In a small bowl, combine mayonnaise, ketchup, mustard, pickle juice, paprika, and hot sauce (optional).
- Mix until smooth and creamy. Chill until ready to use.
3️⃣ Cook the Smash Burgers
- Preheat a griddle or large skillet to 450–500°F (medium-high heat).
- Form the ground beef into loose 3–4 oz balls and season with salt and pepper.
- Place the balls on the hot griddle and smash down with a spatula or press. Cook for 1½–2 minutes, or until crispy edges form.
- Flip the patties, add a slice of cheese on top, and cook for another 1 minute until melted and bubbly.
4️⃣ Toast the Buns
- While the burgers cook, toast the burger buns cut-side down on the griddle until golden and crispy.
5️⃣ Assemble the Burgers
- Place pickle slices on the bottom bun.
- Top with the cooked burger patty, followed by a generous spoonful of caramelized onions.
- Spread the burger sauce on the top bun and place it on top of the burger.
