- Cook the pasta shells.Cook the pasta shells according to the package directions in well-salted water until just al dente. This ensures they are tender but still sturdy enough to hold the filling without tearing. Drain carefully and set aside to cool slightly so they are easier to handle during stuffing.
- Prepare the Sloppy Joe filling.In a large skillet over medium heat, brown the ground beef with the diced onions, breaking the meat into small pieces as it cooks. Continue cooking until the beef is fully browned and the onions are soft and translucent. Stir in the sloppy joe sauce, cream cheese, smoked paprika, and cheddar cheese. Mix until the cream cheese melts completely and the filling becomes smooth, creamy, and evenly combined. The mixture should be thick, rich, and spoonable.
- Stuff the shells.Using a spoon, generously fill each cooked shell with the beef mixture, making sure the filling reaches into the curves of the pasta. Arrange the stuffed shells snugly in a baking dish to help them hold their shape. Sprinkle extra cheddar cheese evenly over the top for a golden, bubbly finish.
- Bake.Bake in a preheated oven at 350°F for about 20 minutes, or until the shells are heated through and the cheese on top is fully melted and lightly golden. The filling should be hot and creamy, with the sauce gently bubbling around the edges.
- Garnish and serve.Remove from the oven and let rest for a few minutes. Garnish with freshly chopped parsley just before serving for a pop of color and freshness.
