Salt & pepper, to taste
1 tbsp olive oil
1 tbsp unsalted butter
For the Pesto Risotto:
1 tbsp olive oil
1 small shallot, finely chopped
1 garlic clove, minced
1 cup Arborio rice
1/3 cup dry white wine
3 cups warm chicken or veggie broth (as needed)
1/2 cup grated Parmesan cheese
1/3 cup basil pesto (store-bought or homemade)
1/4 cup heavy cream
1 tbsp lemon juice
Salt and pepper, to taste
Grapefruit or orange segments (optional garnish)
Toasted almonds or pine nuts (optional crunch)
