Step 1: Make the Dough
- In a small bowl, combine warm milk, yeast, and 1 tablespoon sugar. Let sit for 5–10 minutes until foamy.
- In a large bowl, whisk eggs, melted butter, vanilla, and remaining sugar. Stir in the activated yeast mixture.
- Add flour, cocoa powder, salt, and red food coloring. Stir to combine, then knead for 5–7 minutes until the dough is smooth and elastic. Add flour if sticky.
- Place dough in a greased bowl, cover, and let rise for 1 hour, or until doubled in size.
Step 2: Prepare the Filling
- In a small bowl, combine softened butter, brown sugar, and cinnamon until well mixed.
Step 3: Roll and Fill
- Roll out the risen dough on a floured surface into a 16×12-inch rectangle.
- Spread the filling evenly over the dough.
- Tightly roll into a log from the long side, then slice into 12 equal pieces.
- Place rolls in a greased 9×13-inch baking dish. Cover and let rise again for 30 minutes.

Step 4: Bake the Rolls
- Preheat oven to 350°F (175°C).
- Bake the rolls for 25–30 minutes, or until golden brown and cooked through.
