Pumpkin Pie French Toast

Instructions

1. Prepare the Pumpkin Custard:

  1. In a large mixing bowl, whisk together the eggs, milk, pumpkin puree, brown sugar, vanilla extract, cinnamon, nutmeg, ginger, and salt. Whisk until the mixture is smooth, fully blended, and slightly frothy on top.

2. Dip the Bread:

  1. Preheat a large skillet or griddle over medium heat. Lightly grease with butter or oil.
  2. Working with one slice at a time, dip the bread into the pumpkin custard mixture. Let each side soak for a few seconds, ensuring it’s well-coated but not soggy. Let any excess drip off before transferring to the skillet.

3. Cook the French Toast:

  1. Place the soaked bread slices onto the hot skillet. Cook for about 2 to 3 minutes per side, or until the surface is golden brown and slightly crisp, and the inside is cooked through. Avoid crowding the pan—work in batches if needed.
  2. Adjust heat as necessary to prevent burning while achieving even browning. Add more butter or oil between batches if the pan becomes dry.
