  1. Preheat Oven: Set your oven to 350°F (175°C) and grease a 9×5-inch loaf pan.
  2. Mix Dry Ingredients: In a large bowl, whisk together flour, sugar, baking powder, baking soda, and salt.
  3. Cream Butter & Eggs: In a separate bowl, cream the butter until light and fluffy. Beat in the eggs one at a time until fully combined.
  4. Add Flavor: Stir in vanilla, Greek yogurt, lemon zest, and lemon juice. Mix until smooth and uniform.
  5. Combine: Gradually fold in dry ingredients until just combined — do not overmix.
  6. Add Pistachios: Gently fold in the chopped pistachios.
  7. Bake: Pour the batter into the prepared pan and smooth the top. Bake for 45–50 minutes, or until a toothpick inserted in the center comes out clean.
  8. Cool: Let the bread cool in the pan for 10 minutes, then transfer to a wire rack to cool completely.
