Pineapple Upside Down Bundt Cake

  1. Fill the Pan: Carefully pour the cake batter over the arranged fruit, spreading it evenly without disturbing the pattern.
  2. Bake: Bake the cake following the Bundt cake timing on the cake mix box, or until a knife or skewer inserted into the cake comes out clean.
  3. Cool Slightly: Remove the cake from the oven and let it cool in the pan for 10 minutes. This allows the caramelized topping to settle while still releasing cleanly.
  4. Release the Cake: Run a knife gently around the outer edges and the inner tube of the Bundt pan to loosen the cake.
  5. Invert: Place a large serving plate over the pan and carefully invert the cake. Lift the pan slowly to reveal the fruit-topped cake.
  6. Serve: Slice between the pineapple pieces and serve warm or at room temperature.

To make the pan release, mix equal parts vegetable shortening, vegetable oil, and all-purpose flour until smooth. Apply with a pastry brush or paper towel, paying special attention to corners, nooks, and crannies. This mixture can be stored covered at room temperature and reused.
