Prepare the Marshmallow Filling:
- In a heat-safe bowl, combine mini marshmallows and peanut butter. Microwave in 15–20 second intervals, stirring between each, until marshmallows are melted and smooth.
- Stir in the vanilla extract. Let the mixture cool slightly—it should be spreadable but not runny.
Assemble the Sandwich Cookies:
- Pair the cooled cookies into even-sized sets. Spoon or pipe a generous dollop of marshmallow filling onto the bottom of one cookie, then press the second cookie on top to create a sandwich.
- Optional: Roll the edges in finely crushed graham crackers for texture and extra s’mores flavor.
- Drizzle with melted chocolate, if desired, and allow to set at room temperature or chill briefly to firm up the chocolate.
