Peanut Butter S’mores Sandwich Cookies

Prepare the Marshmallow Filling:

  1. In a heat-safe bowl, combine mini marshmallows and peanut butter. Microwave in 15–20 second intervals, stirring between each, until marshmallows are melted and smooth.
  2. Stir in the vanilla extract. Let the mixture cool slightly—it should be spreadable but not runny.

Assemble the Sandwich Cookies:

  1. Pair the cooled cookies into even-sized sets. Spoon or pipe a generous dollop of marshmallow filling onto the bottom of one cookie, then press the second cookie on top to create a sandwich.
  2. Optional: Roll the edges in finely crushed graham crackers for texture and extra s’mores flavor.
  3. Drizzle with melted chocolate, if desired, and allow to set at room temperature or chill briefly to firm up the chocolate.
