Instructions:
- Prepare the Mashed Potato Base: Bake or microwave the potato until a fork easily pierces it. Once cooked, mash the potato until smooth, making sure there are no lumps. While the mashed potatoes are still warm, beat in 3 cups of powdered sugar and 1 cup of shredded coconut until well combined. Add 1 teaspoon of vanilla extract and mix to incorporate.
- Press the Mixture Into a Pan: Press the potato mixture into a lightly greased 8-inch square pan, spreading it out evenly to cover the entire bottom of the pan.
- Melt the Chocolate: In a saucepan over low heat, melt 3 ounces of semi-sweet chocolate and 3 tablespoons of butter, stirring occasionally until smooth and fully melted. Once the chocolate is melted, remove the pan from the heat.
- Top with Chocolate: Pour the melted chocolate over the potato and coconut mixture, spreading it evenly to cover the surface.
- Refrigerate to Set: Refrigerate the pan until the chocolate has fully set, about 1-2 hours. Once set, cut into squares and serve. These sweet, coconut-filled squares are a delightful treat!
