Peanut Butter No-Bake Cookies

  1. In a medium saucepan, melt the butter over medium heat. Once melted, stir in the sugar and milk, and bring the mixture to a boil. Allow it to boil for 1-2 minutes, stirring frequently to ensure it doesn’t burn.

Mix in the Peanut Butter and Vanilla

  1. After the sugar mixture has boiled, remove it from the heat and stir in the peanut butter and vanilla extract. Stir until the peanut butter is fully melted and the mixture is smooth.

Add the Oats

  1. Stir in the quick-cook oats and salt. Mix well until the oats are evenly coated with the peanut butter mixture. The mixture should be thick and sticky.

Form the Cookies

  1. Using a spoon, drop rounded spoonfuls of the mixture onto a sheet of wax paper or parchment paper. Flatten them slightly with the back of the spoon if desired.

Let the Cookies Set

  1. Allow the cookies to cool at room temperature for about 30-45 minutes or until they are firm and set. You can also place them in the fridge to speed up the process if you’re in a hurry.
