- In a medium bowl, mix the ground graham crackers with granulated sugar and melted butter. Stir until the crumbs are evenly moistened and resemble wet sand. Spoon about 1 to 2 tablespoons of the mixture into each serving cup or muffin liner and press firmly with the back of a spoon to form a solid base. Place the cups in the refrigerator to chill while you prepare the filling.
- In a large bowl, beat the softened cream cheese with powdered sugar and vanilla extract using a hand mixer or stand mixer until the mixture is completely smooth and creamy with no lumps. Scrape down the sides as needed to ensure even mixing.
- Gradually add the heavy whipping cream while continuing to mix on medium-high speed. Whip until the mixture thickens and forms soft peaks. The filling should be light, fluffy, and hold its shape when spooned.
- Remove the prepared crusts from the refrigerator and divide the cheesecake filling evenly among the cups, smoothing the tops with a spoon or spatula. Return the filled cups to the fridge and chill for at least 2 hours, or until set and firm to the touch.
Make the Chocolate Ganache
- Place the chopped semi-sweet chocolate in a heatproof bowl. In a small saucepan or microwave-safe container, heat 1/4 cup heavy cream until it just begins to simmer—do not boil. Pour the hot cream over the chocolate and let sit for 1 minute, then stir until smooth and glossy. Allow to cool slightly until it thickens enough to spoon or drizzle.
Assemble the Cheesecakes
- Remove the chilled cheesecakes from the refrigerator. Spoon a small amount of caramel sauce over each cheesecake, spreading it gently to cover the surface. Follow with a layer of the prepared chocolate ganache.
- Sprinkle the tops with chopped almonds for a nutty crunch and mini chocolate chips for extra texture and flavor. Feel free to add a drizzle of additional caramel or chocolate if desired.
- Return the assembled cheesecakes to the refrigerator until ready to serve. They can be enjoyed chilled straight from the fridge and will hold their shape beautifully when served cold.
