No-Bake Grinch Pie with Whipped Topping & Peppermint

Instructions

  1. Make the crust: In a medium bowl, stir together the graham cracker crumbs and granulated sugar. Add the melted butter and mix until all crumbs are evenly moistened. The texture should resemble damp sand and hold together when pressed.
  2. Form the crust base: Transfer the mixture into a 9-inch pie dish. Press the crumbs firmly into the base and up the sides of the dish using the back of a spoon or a flat-bottomed glass. Aim for an even thickness throughout. Chill the crust in the refrigerator for at least 30 minutes to help it set. No baking required!
  3. Prepare the filling: In a large bowl, whisk together the instant vanilla pudding mix and cold milk for 2–3 minutes, or until the mixture begins to thicken. Use cold milk straight from the fridge for the best results.
  4. Add color and flavor: Stir in the vanilla extract and 4–6 drops of green food coloring. Adjust the color gradually to achieve your desired ā€œGrinchyā€ hue — bright and bold, but still appetizing. Mix well until the color is evenly distributed.
  5. Fold in the whipped topping: Gently fold the thawed whipped topping into the green pudding mixture in two additions. Use a spatula and a light hand to maintain a fluffy, mousse-like texture. Continue folding until no streaks remain and the filling is smooth and uniform.
