No-Bake Christmas Cheesecake Bites


1. In a mixing bowl, beat the cream cheese until smooth and creamy.
2. Add the powdered sugar, vanilla extract, and a pinch of salt. Beat the mixture until it’s fully combined and creamy.
3. Stir in the graham cracker crumbs until the mixture holds together like a thick dough.
4. Roll the mixture into 1-inch balls and place them on a parchment-lined tray.
5. Chill the tray in the fridge for 1 hour or until the bites are firm.
6. While the bites are chilling, melt the white chocolate and colored candy melts in separate bowls according to package instructions.
7. Once the bites are firm, dip each one into the melted white chocolate, allowing any excess to drip off.
8. Immediately top each bite with festive sprinkles and drizzle with additional melted white chocolate if desired.
9. Return the bites to the fridge to chill again until the chocolate is set.
10. Store the cheesecake bites in the fridge until you’re ready to serve them.
