Moroccan Couscous “Night in Marrakech”

  • 🥕 4 carrots (400 g), cut into large pieces
  • 🥔 2 turnips (250 g), cut into chunks
  • 🥒 3 zucchini (450 g), thickly sliced
  • 🫑 1 green bell pepper (150 g), sliced
  • 🫘 400 g cooked chickpeas
  • 🫒 120 g pitted green olives
  • 🌿 20 g fresh parsley, chopped
  • 🌿 20 g fresh coriander, chopped

Couscous Semolina

  • 🌾 600 g medium couscous semolina
  • 🧂 1 tsp salt
  • 🫒 2 tbsp olive oil
  • 💧 ~300 ml hot water
  • 🧈 40 g butter
