Serving, Storage & Reheating
Serving: These cupcakes shine when just warmâthe frosting holds its swirl while the center stays molten. If needed, gently warm unfrosted cupcakes briefly before serving, then add the frosting and chili flakes.
Storage: Keep cooled, frosted cupcakes covered at room temperature if serving the same day. For longer storage, refrigerate in an airtight container; bring to room temperature before serving. Note that the lava center will firm as cupcakes cool.
Reheating: To recapture the molten center, warm individual cupcakes gently just until the core softens again. Avoid overheating, which can dry the crumb or melt the frosting completely.
Troubleshooting & Doneness Cues
- Overflowing tops: Stop at about 3/4 full so the batter has room to rise without spilling over.
- Dry texture: Overbaking sets the center; pull the cupcakes when the tops are set and springy but the middle still feels soft.
- Chocolate peeking through: If a square isnât fully covered, add a small spoonful of batter over it before baking.
- Chili heat: Sprinkle sparinglyâcrushed flakes intensify as they sit. Add more at serving if you want extra warmth.
