Moist & Simple Banana Bread

Instructions

  1. Preheat oven: Set oven to 175°C (350°F). Grease a loaf pan with butter or nonstick spray, or line with parchment paper.
  2. Make the wet mixture:
    In a medium bowl, mash the banana until smooth. Add sugar, eggs, and sour cream. Mix until fully combined and smooth.
  3. Add dry ingredients:
    Stir in the flour and baking soda. Mix gently until just combined—avoid overmixing, as this can make the bread dense.
  4. Bake:
    Pour the batter into the prepared pan and smooth the top. Bake for 50–60 minutes, or until a toothpick inserted in the center comes out clean or with a few moist crumbs.
  5. Cool:
    Let the bread cool in the pan for 10–15 minutes, then transfer to a wire rack to cool completely before slicing.

Tips & Variations

  • Banana ripeness: The riper the banana, the sweeter and more flavorful your bread will be.
  • Add-ins: Stir in 1/2 cup of chopped nuts, chocolate chips, or dried fruit for variety.
  • Make it muffins: Divide the batter into muffin tins and bake for 18–22 minutes at the same temperature.
