Instructions

  1. Preheat the oven to 400°F (200°C). Allow the oven to fully heat so the chicken begins roasting immediately, which helps achieve a crisp, golden exterior.
  2. In a large mixing bowl, combine the olive oil, melted butter, minced garlic, lemon juice, dried oregano, paprika, salt, and black pepper. Whisk until the mixture is fully blended and fragrant, with the butter and oil evenly emulsified.
  3. Add the chicken drumsticks and baby potatoes to the bowl. Toss thoroughly until every piece is well coated with the lemon garlic mixture, ensuring the seasoning reaches all sides for even flavor throughout.
  4. Transfer the chicken and potatoes to a baking dish, spreading the potatoes out in a single layer. Arrange the chicken drumsticks on top so they roast evenly and the skin browns properly. Scatter lemon slices over the dish for extra citrus aroma and flavor.
  5. Place the dish in the preheated oven and roast for 45–50 minutes, turning the chicken and potatoes once halfway through cooking. The chicken should be golden brown, with clear juices when pierced, and the potatoes should be tender and lightly crisped at the edges.
