- 1 can (14.5 oz) diced tomatoes (no added salt)
- 1 can (15 oz) white beans, drained and rinsed (like cannellini or great northern)
- 4 cups low-sodium vegetable broth or chicken broth
- 2 cups chopped kale or spinach
- 1 tsp dried basil
- 1 tsp dried oregano
- 1/2 tsp dried thyme
- Salt and pepper to taste
- 1 bay leaf (optional)
