Grandma’s Chocolate Pie Filling
Ingredients
- ½ cup cocoa powder
- ¼ cup cornstarch
- 3 egg yolks, beaten
- 1½ cups sugar
- ¼ teaspoon salt
- 2 cups milk
- 1 teaspoon vanilla extract
Directions
- Combine Dry Ingredients: In a saucepan, mix together the cocoa powder, cornstarch, sugar, and salt until evenly blended.
- Add Egg Yolks: Stir in the beaten egg yolks, mixing well to form a smooth paste.
- Add Milk Gradually: Slowly pour in the milk while stirring constantly to prevent lumps from forming.
- Cook the Filling: Place the saucepan over medium-high heat and cook, stirring continuously. As the mixture heats, it will gradually thicken. Continue cooking until smooth, glossy, and pudding-thick.
- Finish with Vanilla: Remove from heat and stir in the vanilla extract until fully incorporated.
- Fill the Crust: Pour the hot chocolate filling into the pre-baked pie shell, smoothing the top.
- Chill: Place the pie in the refrigerator and chill until fully set, at least a few hours.
