Garlic Mushroom & Broccoli Stir-Fry with Carrots

👩‍🍳 Directions

1️⃣ Prep the Veggies

  1. Slice mushrooms and carrots into even pieces.
  2. Cut broccoli into small, bite-sized florets.

2️⃣ Cook the Vegetables

  1. Heat the oil in a large skillet or wok over medium-high heat.
  2. Add the mushrooms and cook for 3–4 minutes, stirring occasionally, until browned and tender.
  3. Add the broccoli and carrots to the skillet. Stir-fry for another 4–5 minutes until crisp-tender.

3️⃣ Make the Sauce

  1. Push the veggies to one side of the pan. Add minced garlic and sauté for 30 seconds until fragrant.
  2. Pour in soy sauce, honey (or maple syrup), vinegar or lemon juice, black pepper, and optional chili flakes.
  3. Toss all the vegetables in the sauce until everything is evenly coated and glossy.

4️⃣ Finish & Serve

  1. Continue cooking for another 1–2 minutes, allowing the sauce to thicken slightly and cling to the veggies.
  2. Remove from heat and garnish with sesame seeds if using.
  3. Serve hot on its own, or spoon over a bed of rice or noodles for a complete meal.
