1. Make the Batter
- In a medium bowl, whisk together milk, egg, vanilla extract, and melted butter until smooth.
- Add sugar, baking soda, and salt to the wet ingredients, stirring to combine.
- Slowly fold in the flour, mixing just until the batter is smooth and free of lumps.
2. Prep for Frying
- Transfer the batter into a gallon-sized zip-top bag. Set aside while the oil heats.
- Pour vegetable oil into a deep frying pan to about ½ inch depth. Heat over high for 2 minutes, then reduce to medium heat.
- Test readiness by dropping in a small bit of batter—it should sizzle and bubble immediately.
3. Fry the Bites
- Snip a small hole in one corner of the batter bag.
- Pipe 1–2 inch rounds or swirls of batter into the hot oil. Fry for 1–2 minutes per side until golden brown.
- Use a slotted metal spatula to flip and remove the bites to a paper towel-lined plate to drain excess oil.
