  1. Prepare the chicory: Start by removing any damaged or discolored outer leaves. Cut the chicory heads lengthwise and then slice them into fine strips. If you prefer a less bitter flavor, consider removing part of the tough white core at the base, which holds much of the bitterness.
    💡 Tip: If your chicory tastes particularly bitter, rinse the strips briefly in cold water, then pat dry with a clean towel.
  2. Cut the fruit: Core and chop the apple into small cubes or thin strips, leaving the peel on if you enjoy the added texture. Slice the pineapple into bite-sized pieces — fresh pineapple will offer the most vibrant flavor, but well-drained canned slices work too. Peel the mandarin oranges and gently divide them into segments for sweet, juicy bursts throughout the salad.
  3. Add the cheese: Cut your cheese of choice into small, uniform cubes and add them to the salad bowl. For a touch of elegance or a bold twist, consider swapping with crumbled feta, creamy goat cheese, or a touch of blue cheese for extra depth.
  4. Make the dressing: In a small bowl, combine the full-fat yogurt, honey, mustard, a small spoonful of mayonnaise, and a splash of lemon juice. Whisk until smooth and creamy.
    Adjust to taste:

    ➕ more lemon = fresher and brighter
    ➕ more mustard = sharper and spicier
