Cream the butter and sugar
In a large mixing bowl, cream together the butter (or margarine) and sugar until light and fluffy. This step is important for incorporating air into the dough, which helps keep the cookies tender rather than dense.
Add wet ingredients
Beat in the egg until fully combined, then mix in the vanilla extract. Scrape down the sides of the bowl to ensure everything is evenly incorporated.
Incorporate dry ingredients
In a separate bowl, mix together the flour and baking powder. Gradually add the dry ingredients to the butter mixture, mixing slowly until a soft, smooth dough forms. The dough should be pliable but not sticky.
Roll and cut
Lightly flour your work surface and rolling pin. Roll the dough out to your desired thickness, typically about ¼ inch for soft cookies. Use a 2½-inch heart-shaped cutter to cut out cookies, re-rolling scraps as needed.
Bake
Preheat your oven to 400°F (205°C). Place the cookies on an ungreased or parchment-lined baking sheet, spacing them slightly apart. Bake for 7–10 minutes, watching closely. The cookies should remain light in color with only faint browning around the edges.
