Double Chocolate Marshmallow Cookies Recipe

Instructions

1️⃣ Prepare the Oven

  1. Preheat your oven to 350°F (180°C) to ensure it’s hot and ready for baking.
  2. Line a baking sheet with parchment paper to prevent the cookies from sticking and make cleanup easier.

2️⃣ Mix the Dry Ingredients

  1. Sift together 1 cup of flour, 1/3 cup cocoa powder, 1/2 teaspoon baking soda, and 1/4 teaspoon salt into a bowl. This step helps to remove any lumps and ensures an even distribution of the dry ingredients in the dough.

3️⃣ Make the Cookie Dough

  1. In a separate bowl, cream together 1/2 cup butter, 1/2 cup granulated sugar, and 1/4 cup brown sugar until the mixture is light and fluffy. This will take about 3-4 minutes using an electric mixer.
  2. Add 1 large egg and 1 teaspoon vanilla extract to the butter mixture, and beat until smooth and fully combined.
  3. Gradually add the sifted dry ingredients to the butter mixture, mixing until just combined. Be careful not to overmix at this stage, as it could result in dense cookies.
  4. Fold in 1 cup of chocolate chips or chocolate drops with a spatula. The chocolate chips add little pockets of melty chocolate goodness to every bite!

4️⃣ Shape the Cookies

  1. Scoop tablespoon-sized pieces of dough onto the prepared baking sheet, spacing them about 2 inches apart. You can use a spoon or a cookie scoop to ensure uniform cookie sizes.
  2. Lightly flatten each ball of dough with your fingers or the back of a spoon. This helps them spread evenly while baking.
  3. Bake the cookies in the preheated oven for 10-12 minutes. They should be set around the edges but still soft in the center.

5️⃣ Add the Marshmallows

  1. When the cookies come out of the oven, immediately place 1 large marshmallow in the center of each cookie. The marshmallows will melt slightly, creating a gooey, irresistible center.
  2. Return the baking sheet to the oven and bake for an additional 2 minutes, just until the marshmallows puff up and begin to melt.

6️⃣ Decorate

  1. Once the cookies have cooled completely, drizzle them with 1/2 cup of melted chocolate for a decadent touch. You can use a spoon or a piping bag for a more controlled drizzle.

🍫✨ Tips

  • If you want a richer chocolate flavor, feel free to add 1-2 extra tablespoons of cocoa powder to the dough.
  • If you don’t want the marshmallows to spread too much, let the cookies cool for 2-3 minutes after baking before adding the marshmallows. This helps keep the shape intact.
  • A mix of milk and dark chocolate chips in the dough gives a perfect balance of sweetness and richness in every bite.

These Double Chocolate Marshmallow Cookies are the perfect combination of rich chocolate, gooey marshmallows, and a crisp cookie exterior. Whether you’re enjoying them with a cup of milk or sharing them at a party, they’ll surely be a hit!
