Instructions
1️⃣ Prepare the Oven
- Preheat your oven to 350°F (180°C) to ensure it’s hot and ready for baking.
- Line a baking sheet with parchment paper to prevent the cookies from sticking and make cleanup easier.
2️⃣ Mix the Dry Ingredients
- Sift together 1 cup of flour, 1/3 cup cocoa powder, 1/2 teaspoon baking soda, and 1/4 teaspoon salt into a bowl. This step helps to remove any lumps and ensures an even distribution of the dry ingredients in the dough.
3️⃣ Make the Cookie Dough
- In a separate bowl, cream together 1/2 cup butter, 1/2 cup granulated sugar, and 1/4 cup brown sugar until the mixture is light and fluffy. This will take about 3-4 minutes using an electric mixer.
- Add 1 large egg and 1 teaspoon vanilla extract to the butter mixture, and beat until smooth and fully combined.
- Gradually add the sifted dry ingredients to the butter mixture, mixing until just combined. Be careful not to overmix at this stage, as it could result in dense cookies.
- Fold in 1 cup of chocolate chips or chocolate drops with a spatula. The chocolate chips add little pockets of melty chocolate goodness to every bite!
4️⃣ Shape the Cookies
- Scoop tablespoon-sized pieces of dough onto the prepared baking sheet, spacing them about 2 inches apart. You can use a spoon or a cookie scoop to ensure uniform cookie sizes.
- Lightly flatten each ball of dough with your fingers or the back of a spoon. This helps them spread evenly while baking.
- Bake the cookies in the preheated oven for 10-12 minutes. They should be set around the edges but still soft in the center.
5️⃣ Add the Marshmallows
- When the cookies come out of the oven, immediately place 1 large marshmallow in the center of each cookie. The marshmallows will melt slightly, creating a gooey, irresistible center.
- Return the baking sheet to the oven and bake for an additional 2 minutes, just until the marshmallows puff up and begin to melt.
6️⃣ Decorate
- Once the cookies have cooled completely, drizzle them with 1/2 cup of melted chocolate for a decadent touch. You can use a spoon or a piping bag for a more controlled drizzle.
🍫✨ Tips
- If you want a richer chocolate flavor, feel free to add 1-2 extra tablespoons of cocoa powder to the dough.
- If you don’t want the marshmallows to spread too much, let the cookies cool for 2-3 minutes after baking before adding the marshmallows. This helps keep the shape intact.
- A mix of milk and dark chocolate chips in the dough gives a perfect balance of sweetness and richness in every bite.
These Double Chocolate Marshmallow Cookies are the perfect combination of rich chocolate, gooey marshmallows, and a crisp cookie exterior. Whether you’re enjoying them with a cup of milk or sharing them at a party, they’ll surely be a hit!
