Preparation

  1. Prepare the Dough: In a large mixing bowl, combine all the dry ingredients: flour, margarine or butter, nutmeg, salt, and sugar. If you prefer, you can use a stand mixer, a whisk, or a spatula, but using your hands often yields the best results when it comes to blending butter into flour. Mix until everything is well incorporated, and the butter has formed small crumbs in the flour.
  2. Add the Wet Ingredients: Gradually add the evaporated milk to the dry mixture, stirring to combine. Then, slowly add the water bit by bit, mixing as you go. The reason for adding the water slowly is that the texture of margarine or butter can vary, so you want to adjust the consistency of the dough. Continue adding water until the dough is smooth and elastic, but not too sticky. You should stop once the dough has reached the right consistency for rolling out.
  3. Knead the Dough: Turn the dough out onto a floured surface and knead it gently for a few minutes until smooth. Be careful not to over-knead the dough, as this can make it tough. The goal is to achieve a soft, pliable dough.
  4. Rest the Dough: Once kneaded, place the dough back into the bowl and cover it with a clean kitchen towel, cling film, or foil. Allow the dough to rest for about 30-40 minutes at room temperature. This resting time helps relax the dough, making it easier to roll out.
