Delicious Custard Cookies

Method

  1. Mix the Dry Ingredients: In a large bowl, combine the flour and custard powder. Mix well to ensure the two are evenly incorporated. The custard powder will add a lovely flavor and color to the cookies.
  2. Cream Butter and Icing Sugar: In another bowl, cream the butter and icing sugar together. Beat them for a few minutes until the mixture becomes light and fluffy. This step is important to create a smooth, creamy texture in the cookies.
  3. Add the Egg and Flour Mixture: Whisk the egg and add it to the creamed butter and icing sugar. Mix well to combine. Then, gradually add the flour and custard powder mixture to the wet ingredients, stirring gently until everything is incorporated into a smooth dough.
  4. Form the Cookies: Scoop out portions of the dough and roll them into balls using your palms. The size of each ball should be about the size of a small walnut. Once rolled, dip each dough ball into granulated sugar to coat the outside, giving them a lovely sweet crunch when baked.
  5. Shape and Decorate: Place the sugar-coated dough balls onto a baking sheet lined with parchment paper. Use a fork to gently press each ball down slightly, creating a light indentation in the center of each cookie. This not only helps them bake evenly but also gives them a classic cookie shape.
  6. Add Sprinkles: If desired, add sprinkles to the top of each cookie for a festive touch. This step is optional but adds a fun, colorful element to the cookies.
  7. Bake the Cookies: Preheat your oven to 180°C (350°F) and bake the cookies for about 10-12 minutes or until they are lightly golden around the edges. Keep an eye on them to avoid overbaking—these cookies should be soft and slightly chewy on the inside.
  8. Cool and Serve: Once baked, allow the cookies to cool on the baking sheet for a few minutes before transferring them to a wire rack to cool completely. The cookies will firm up as they cool, and the custard flavor will become more pronounced.

These custard cookies are soft, flavorful, and incredibly easy to make. The combination of custard powder and butter creates a rich, buttery flavor that pairs wonderfully with a cup of tea or coffee. Enjoy!
