- Prepare the Vegetables:
Peel and dice the potatoes into small, bite-sized chunks. Dice the onion and chop the celery to your preferred amount. Add all of the vegetables to the bottom of a large crockpot. - Add the Soups and Broth:
Pour in the cream of chicken, cream of mushroom, and both cans of cream of celery soup. Add enough chicken broth to just cover the contents of the crockpot (amount can be adjusted based on your preferred soup thickness). Season generously with salt and pepper. Stir to combine all ingredients evenly. - Cook:
Cover and cook on HIGH for 6 hours. As it cooks, the potatoes will become tender and the flavors will blend into a thick, creamy base. No need to stir during cooking—just let it do its thing.
