Corn Fritters (Crispy Outside, Tender Inside!)

These classic corn fritters are quick, comforting, and endlessly versatile. Crispy edges, fluffy centers, and bursts of sweet corn make them perfect as a side dish, snack, or even a light meal.

🧺 Ingredients

  • 1 can whole kernel corn, drained well

  • 2 eggs

  • Salt & pepper, to taste

  • ½ cup all-purpose flour

  • 1 tsp baking powder

  • ½ cup shredded cheese (cheddar, Colby Jack, or mozzarella work great)

  • 1 pat butter

  • 2 tbsp oil (vegetable or canola)

  • ¼ cup chopped parsley (optional, but freshens everything up)
