Preheat & Prep
Preheat oven to 350°F (175°C). Grease and flour two 9×5-inch loaf pans (or line with parchment). -
Mix Wet Ingredients
In a large bowl, beat eggs, sugar, and oil until smooth and slightly thickened. -
Add Dry Ingredients
Stir in flour, salt, baking soda, baking powder, cinnamon, and vanilla until just combined—don’t overmix. -
Fold in Zucchini & Nuts
Gently fold in grated zucchini and walnuts (if using). -
Bake
Divide batter evenly between pans. Bake 55–65 minutes, or until a toothpick inserted in the center comes out clean. -
Cool
Cool in pans for 10–15 minutes, then turn out onto a rack to cool completely before slicing.
