1️⃣ Prep the Bread 🍞
- Lay the bread slices flat on a clean surface.
- Using a rolling pin, gently flatten each slice to about ¼-inch thickness (no need to be perfect, just enough to roll easily). Trim the crusts if desired for seamless rolling.
2️⃣ Make the Cinnamon Filling 🍯
- In a small bowl, mix together melted butter, brown sugar, and 2 tablespoons of cinnamon until smooth and paste-like.
3️⃣ Roll the Scrolls
- Spread about 1 teaspoon of the cinnamon filling evenly over each flattened slice of bread.
- Starting from one short end, roll each slice tightly into a log, and place seam-side down on a plate or tray. Repeat with the remaining slices.
4️⃣ Prepare the Egg Dip 🧇
- In a wide, shallow dish (a pie plate works well), whisk together eggs, milk, vanilla extract, and ½ teaspoon cinnamon until fully combined and slightly frothy.
5️⃣ Dip & Fry 🍳
- Heat a large nonstick skillet or griddle over medium heat. Add 1 tablespoon of butter or oil.
- Working in batches, dip each roll-up into the egg mixture for 10–15 seconds per side, just enough to coat them (do not soak them to avoid sogginess). Let any excess drip off.
- Place the roll-ups seam-side down in the hot pan. Cook for 2–3 minutes per side, rotating gently with tongs, until the roll-ups are golden brown and crisp on all sides. Add more butter or oil as needed between batches.
6️⃣ Serve Warm 🍽️
- Transfer the roll-ups to a wire rack or serving platter. Dust generously with powdered sugar or drizzle with the optional cinnamon glaze.
- Serve immediately while still warm for the best texture and flavor!
