- In a deep skillet, heat 2 inches of vegetable oil over medium-high heat to 375°F (190°C). Use a thermometer for accuracy.

- Beat the cream cheese, granulated sugar, lemon juice, vanilla extract, and salt in a stand mixer until smooth and creamy. Scrape down the sides of the bowl as needed to ensure everything is incorporated.
3ď¸âŁ Assemble the Egg Rolls
- Place 2 tablespoons of the cream cheese filling in the center of each egg roll wrapper.
- Fold the bottom corner of the wrapper over the filling, tuck in the sides, and roll tightly to enclose the filling.
- Seal the edge with a little water to help hold the shape.
- Repeat for the remaining wrappers.
4ď¸âŁ Prepare the Cinnamon Sugar Coating
- In a small bowl, stir together 1 cup of granulated sugar and 2 tablespoons of ground cinnamon.
- Set aside.
