Prepare the Shrimp Veggie Medley
- Heat olive oil in a pan over medium heat. Add the minced garlic and sauté briefly until fragrant, taking care not to let it brown.
- Add broccoli florets, carrot slices, and bell peppers to the pan. Cook, stirring occasionally, until the vegetables are tender but still crisp and vibrant in color.
- Add the shrimp to the pan and season with salt and pepper. Cook for 2–3 minutes, stirring gently, until the shrimp turn pink, opaque, and curl slightly.
- Remove from heat and sprinkle with chopped parsley if using, adding a fresh herbal note to the medley.
