Cajun Salmon with Garlic Mash and Shrimp Veggie Medley

Prepare the Shrimp Veggie Medley

  1. Heat olive oil in a pan over medium heat. Add the minced garlic and sauté briefly until fragrant, taking care not to let it brown.
  2. Add broccoli florets, carrot slices, and bell peppers to the pan. Cook, stirring occasionally, until the vegetables are tender but still crisp and vibrant in color.
  3. Add the shrimp to the pan and season with salt and pepper. Cook for 2–3 minutes, stirring gently, until the shrimp turn pink, opaque, and curl slightly.
  4. Remove from heat and sprinkle with chopped parsley if using, adding a fresh herbal note to the medley.
