Butter Pecan Cake with Toasted Pecan Frosting

👨‍🍳 Instructions

1. Preheat the Oven

Set your oven to 350°F (175°C). Grease and flour two 9-inch round cake pans thoroughly to prevent sticking.

2. Prepare the Cake Batter

  1. In a large bowl, cream the butter and sugar together until light and fluffy (about 3–4 minutes).
  2. Add the eggs one at a time, mixing well after each addition. Stir in the vanilla extract.
  3. In a separate bowl, whisk together the flour, baking powder, and salt.
  4. Gradually add the dry ingredients to the butter mixture, alternating with the milk, beginning and ending with the flour mixture. Stir just until combined—do not overmix.
  5. Gently fold in the toasted pecans.

3. Bake the Cake

  1. Divide the batter evenly between the prepared pans and smooth the tops with a spatula.
  2. Bake for 25–30 minutes, or until a toothpick inserted into the center comes out clean.
  3. Let the cakes cool in the pans for 10 minutes, then transfer to wire racks to cool completely.
