1. Preheat the Oven
Set your oven to 350°F (175°C). Grease and flour two 9-inch round cake pans thoroughly to prevent sticking.
2. Prepare the Cake Batter
- In a large bowl, cream the butter and sugar together until light and fluffy (about 3–4 minutes).
- Add the eggs one at a time, mixing well after each addition. Stir in the vanilla extract.
- In a separate bowl, whisk together the flour, baking powder, and salt.
- Gradually add the dry ingredients to the butter mixture, alternating with the milk, beginning and ending with the flour mixture. Stir just until combined—do not overmix.
- Gently fold in the toasted pecans.
3. Bake the Cake
- Divide the batter evenly between the prepared pans and smooth the tops with a spatula.
- Bake for 25–30 minutes, or until a toothpick inserted into the center comes out clean.
- Let the cakes cool in the pans for 10 minutes, then transfer to wire racks to cool completely.
