🥥 Coconut Bundt Cake
Ingredients:
- 2 1/4 cups all-purpose flour
- 2 tsp baking powder
- 1/2 tsp baking soda
- 1/2 tsp salt
- 3/4 cup unsalted butter, softened
- 1 3/4 cups granulated sugar
- 4 large eggs
- 1/2 cup sour cream
- 1/4 cup coconut milk
- 1 tsp vanilla extract
- 1 cup shredded coconut
Instructions:
- Preheat oven to 350°F (175°C). Grease Bundt pan well.
- Whisk flour, baking powder, baking soda, and salt.
- Cream butter and sugar until fluffy. Add eggs one at a time.
- Mix in sour cream, coconut milk, and vanilla. Fold in dry ingredients.
- Stir in shredded coconut. Pour into pan.
- Bake 45–55 minutes. Cool slightly, then remove from pan.
- Add coconut glaze and sprinkle with toasted coconut if desired.
