Bundt Cake Favorites – Lemon, Chocolate, Pumpkin & Coconut

🥥 Coconut Bundt Cake

Ingredients:

  • 2 1/4 cups all-purpose flour
  • 2 tsp baking powder
  • 1/2 tsp baking soda
  • 1/2 tsp salt
  • 3/4 cup unsalted butter, softened
  • 1 3/4 cups granulated sugar
  • 4 large eggs
  • 1/2 cup sour cream
  • 1/4 cup coconut milk
  • 1 tsp vanilla extract
  • 1 cup shredded coconut

Instructions:

  1. Preheat oven to 350°F (175°C). Grease Bundt pan well.
  2. Whisk flour, baking powder, baking soda, and salt.
  3. Cream butter and sugar until fluffy. Add eggs one at a time.
  4. Mix in sour cream, coconut milk, and vanilla. Fold in dry ingredients.
  5. Stir in shredded coconut. Pour into pan.
  6. Bake 45–55 minutes. Cool slightly, then remove from pan.
  7. Add coconut glaze and sprinkle with toasted coconut if desired.
