Brown Sugar Meatloaf with Ketchup Glaze (Easy & Foolproof)

  1. Preheat your oven to 375°F (190°C).
  2. Lightly grease a 9×5-inch loaf pan.
  3. Press the brown sugar evenly into the bottom of the pan, packing it down gently so it forms an even layer.
  4. Spread the ketchup evenly over the brown sugar, creating a thick glaze base.
  5. In a large mixing bowl, combine the meatloaf mix, beaten eggs, milk, chopped onion, and bread crumbs. Mix gently just until everything is combined — avoid overmixing to keep the meatloaf tender.
  6. Carefully press the meat mixture into the loaf pan on top of the ketchup layer, smoothing the surface slightly.
  7. Bake uncovered for 1 hour, or until the meatloaf is fully cooked and the edges are bubbling.
  8. Remove from the oven and carefully pour off the excess juices into a bowl. Discard the juices.
  9. Let the meatloaf rest in the pan for 10 minutes to firm up.
  10. Invert the loaf onto a serving platter or cutting board so the brown sugar–ketchup glaze is on top.
